Sam's Banana Loaf

Ingredients

• 10 eggs
• 700g butter
• 1kg bananas
• 5 tspn ground ginger
• 1kg 350g demerara sugar
• 5 tspn baking powder
• 5 tspn bicarbonate of soda
• 1kg 400g plain white wheat flower

Preparation Method

1. Preheat the oven to 170C/340F/gas 3, grease & line 2 shallow tins
2. Whisk the egg & sugar together till mixed & slightly pale but not over whisked
3. Whisk in slowly the very ripe mashed bananas & then the dried ingredients
4. Add the melted but not hot butter & mix well
5. Pour into the greased & lined baking trays & bake at 150C for 45-60mins
6. To serve, allow to cool for 10 mins in the tin before turning out onto a cooling wire
7. Serve warm with custard or set aside to cool completely & serve cold
